Another easy weekday meal to make! The recipe below serves two, but you can easily double the recipe if you have guests. We sometimes add “toppings” to this meal; my husband like to sprinkle his with cheese (he puts the cheese in between the meat and the sauce so it melts nicely) and I like to sprinkle red pepper flakes on mine to add some spice. Enjoy!
Shopping List
- 1 LB. Ground Turkey (I get Trader Joe’s All Natural Ground Turkey)
- 2-3 Cups of Marinara Sauce (I get Trader Joe’s Organic No Salt Added Marinara Sauce)
- 2 Tablespoons Olive Oil
- 2 Cups Broccoli Florets
- 2 Cups Sugar Snap Peas
- Oregano (to taste)
- Camp Mix Original Seasoning (you can purchase here. You can also just use salt, pepper, and garlic salt)
Broccoli and Sugar Snap Peas:
- Preheat oven to 415°
- Line a cookie sheet with foil
- In a large Ziploc bag, combine broccoli, sugar snap peas, and 2 TBSP of olive oil. Close the bag and shake until oil is evenly distributed
- Lay the broccoli and peas on the cookie sheet and sprinkle camp mix evenly over all the vegetables
- Bake for 15-20 minutes then serve
Ground Turkey Marinara:
To cook the turkey,
- Preheat large pan on stovetop on medium heat (I use this pan HERE).
- Spray pan with non-stick cooking spray (I get the Trader Joe’s Olive Oil Spray) and put meat in pan
- Using spatula, chop up the meat into small “ground up” pieces, stirring occasionally
- Cook for 10-12 minutes, stirring every 2-3 minutes to get browned and cooked evenly
To heat the marinara sauce,
- Put a small sauce pan on stovetop on med-low heat
- Put the 2-3 cups of marinara sauce in the pan and cover (as it gets hotter it will “pop” making the sauce splatter)
- Sprinkle in Oregano and Camp Mix to taste (I usually do 4-5 shakes of each) and stir occasionally until hot
