Marinated Pork Loin Cutlets & Sautéed Green Beans

Another quick and simple gluten-free, dairy-free dinner… marinated pork loin cutlets & sautéed green beans. It is incredibly easy to make, healthy, and tastes delicious! If you are not a fan of green beans, you could also serve with either broccoli or brussels sprouts from previous recipes.  We had the Rodney Strong Chardonnay with this dinner and it paired very nicely (it’s not a bad idea to pour a small glass to enjoy while preparing the meal as well). Enjoy!

Shopping List:

  • 1 lb. boneless center cut pork loin cutlets (I get mine at Trader Joe’s… you could also use any type of boneless pork chop)
  • 1/3 cup Salamida Original State Fair Spiedie Sauce (you can purchase HERE or at any local grocery store)
  • 1 lb. green beans (I get the bag of Trader Joe’s trimmed & cleaned green beans)
  • 1/2 tablespoon olive oil (you could also use an olive oil spray)
  • Salt & Pepper to taste

Instructions:

  • Preheat oven to 375°
  • Lay the cutlets in a single layer flat in a baking dish, similar to the one found HERE
  • Pour the 1/3 cup Spiedie Sauce over the cutlets and let marinade for 2-3 hours (you could also marinade overnight for a little extra flavor or skip the marinading time all together if you want to make right away)
  • Bake in oven for 12-17 minutes, or until internal temperature is at 160° (a similar meat thermometer to the one I use can be found HERE)
  • While the cutlets are baking, preheat medium pan on stovetop to medium heat. Add 1/2 tablespoon olive oil, green beans, and salt & pepper to the pan and sauté for 7-10 minutes (until browned and warm)
