I love any type of cole slaw but I find a lot of the pre-made slaws have onion, are made with less healthy oils like canola or soybean, and/or contain a lot of sugar. I decided to try making my own crunchy cabbage slaw when I saw a version of one that looked good at Whole Foods. The Whole Foods version had onions in it so after a little google research and modification, I came up with my own crunchy cabbage slaw. I make this on Sundays, let it sit overnight, and serve it as a side for our lunches (it lasts a few days). If you like a more vinegar-flavored slaw, add an extra tablespoon for the extra tang.
Shopping List
- 2 10 oz. bags of shredded cabbage ( I get mine at Trader Joe’s)
- 1/2 tablespoon sesame seeds
- 1/4 cup sliced almonds
- 3 tablespoons olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon honey
- salt (to taste)
Instructions
- Mix olive oil, apple cider vinegar, and honey together to make the dressing.
- In a large bowl, combine cabbage, sesame seeds, and almonds. Pour the dressing and mix well.
- For the best taste, refrigerate for at least an hour before serving.
Made this for dinner tonight and it was incredible. I made it without the sesame seeds because I forgot to pick those up but I decided to live on the edge and make it anyway.
Keep those great recipes coming. Can’t wait to try the salmon.
