Cilantro Lime Chicken with Sautéed Brussels Sprouts

This cilantro lime chicken dish was inspired by my lemon basil chicken recipe I made a couple months ago. I like a citrus-flavored chicken and decided to try substituting the lemon and basil with lime and cilantro. I can’t decide which one I like better! It’s nice to have a variety of recipes when you make as many chicken dishes as I do, so I’m happy to add the cilantro lime chicken with sautéed Brussels sprouts to the rotation.

Shopping List

  • 1 lb. boneless, skinless chicken breast
  • 1 1/2 tablespoons olive oil
  • 3 limes (juice and pulp)
  • 1/3 cup chopped cilantro
  • 1 bag Brussels sprouts
  • Camp Mix, optional to taste (sold on their website or on Amazon, I get mine at our local butcher shop)

Instructions

Chicken:

  • Preheat oven to 375°.
  • In a small container, combine 1 tablespoon olive oil and the juice and pulp of 3 limes. Stir until mixed completely together.
  • In a small baking dish, lay the chicken breast flat and pour the lime/oil mixture over the chicken, then top with the chopped cilantro.
  • Bake for 35-40 minutes, or until internal temperature is 165°.

Brussels sprouts:

  • Preheat pan on stovetop to medium heat
  • Cut the Brussels sprouts in halves (I also cut off the part that attached them to the stalk and throw away)
  • Add a 1/2 tablespoon of olive oil to the pan, making sure the entire bottom of the pan is coated
  • Add Brussels sprouts and sprinkle with Camp Mix seasoning
  • Stir every few minutes to cook evenly
  • Cook for 8-10 minutes or until lightly browned

    I’ve been slacking the last few months as far as preparing these amazing recipes, it is summer you know. Anyway I tried this one the other night and it was fantastic. I substituted asparagus for the Brussels sprouts and I also included a baked sweet potato. I like to spice things up occasionally. And they say variety is the spice of life. Well I hope everyone who follows this site tries this and the many other wonderful dishes that are posted. Please keep them coming and I will be sure to catch up.
