German Potato Salad

German potato salad is amazing but I always have to make my own since it is traditionally made with onions. I also had a hard time finding a recipe that didn’t call for added sugar. Thankfully, my trusty Whole Foods hot bar started serving a version that was made without added sugar so I tried making it myself (to avoid the onions). It was delicious! It’s fairly easy to make and will definitely enter the rotation of side dishes when we’re eating carbs. The recipe below serves 6-8 people so you can modify accordingly.

Shopping List

  • 2 pounds Yukon gold or yellow potatoes
  • 1/2 pound bacon (I recommend using a nitrite/nitrate-free bacon)
  • 1/3 cup olive oil
  • 3 tablespoons whole grain mustard (I get mine at Trader Joe’s)
  • 6 tablespoons apple cider vinegar (add an additional 1-2 tablespoons if you like a more vinegar-flavor)
  • 3 tablespoons chopped, fresh parsley
  • Salt and pepper (optional, to taste)

Instructions

  • Boil potatoes (with or without peels) in salted water 15 to 20 minutes. Don’t let them get too soft, the potatoes should not fall apart.
  • Slice the bacon and cook on the stovetop on medium heat until browned.
  • Thickly slice the slightly cooled potatoes.
  • In a large bowl, combine bacon, oil, mustard and vinegar. Gently toss in potatoes and chopped parsley. Season with salt and pepper and serve.
