Crispy Oven Baked Fries

You will still be eating a potato (and carbs) but if you’re going to eat fries this recipe is about as healthy as you can get. These crispy oven baked fries are made with very little oil (just cooking spray) and only three other ingredients. The secret to making them crispy without the excess oil? Egg whites! The egg whites dry out while baking to make them extra crispy without frying!

While researching recipes I found a lot of people soaked their sliced potatoes in ice water from anywhere between 30 minutes to 2 hours prior to cooking to remove excess starch. This helps make them less mushy and achieve maximum crispiness. For reference, I soaked my potato slices for 30 minutes and was happy with the crispiness.

Shopping List

  • 4-5 Russet potatoes (serves 3-4 people)
  • 2 Egg whites
  • Cooking spray (olive oil or canola oil)
  • Salt and pepper (to taste)

Instructions

  • Preheat oven to 425°.
  • Scrub the potatoes thoroughly to remove any excess dirt (I use Trader Joe’s fruit and vegetable wash).
  • Cut the potatoes into 1/4 inch slices and soak in ice water for at least 30 minutes. After soaking, remove from water and pat dry with a towel.
  • Whisk the 2 egg whites in a small bowl until frothy then add the salt and pepper (or any other seasoning to your liking).
  • Spray a baking sheet with non-stick cooking spray, then dip each potato slice into the egg white mixture covering completely. Place on the sheet making sure the slices are in a single layer, not touching.
  • Add additional seasoning to the potatoes as needed.
  • Bake about 30 minutes, flipping once or twice (you can spray with additional cooking oil while flipping for extra crispiness).

    Like all the other recipes found on here these fries are absolutely delicious. I had hem in ice water for 2 hrs and they were nice and crispy after 30 minutes.
