My goal of eating more seafood is off to a great start in 2019. I’m trying to limit meat to only a couple of times a week, so seafood dishes are becoming more frequent in meal rotations. I tried making baked cod for the first time last month, and it was so good we’ve already made it a few more times. Cooking seafood always intimidated me, but I am pleasantly surprised at how easy it is to make! Even the prep and clean-up time for a baked seafood dish is less than ten minutes combined (especially if you line your baking dish with foil).
Since I like my food to be on the “plainer” side we stuck with a simple recipe of just olive oil, lemon, salt and pepper. The man at the seafood counter told us about Betts seasoning so we bought that as well. We only put it on half of cod in case I didn’t like it, but it was good! I made kale chips as our side to the baked cod.
Shopping List
- 1 lb. wild caught cod fillet
- 1 lemon
- Olive oil
- Salt and pepper (to taste)
- Betts seasoning (optional)
Instructions
- Preheat oven to 350°.
- Rinse the cod fillet(s) with cold water and dry with paper towel.
- Line a 4-sided baking sheet with foil and place the cod in the center.
- Brush the top and bottom of the cod fillet(s) with olive oil (I use a silicone brush).
- Pour the juice of the lemon on top of the cod, then sprinkle with salt and pepper. If you are using the Betts seasoning, sprinkle that on as well.
- Bake in the oven for 15-20 minutes (you will know when it is done when it flakes easily with a fork).
