2 ingredient cookie

You did not read that wrong. I discovered the recipe of a 2-ingredient cookie a few months ago and have been hooked ever since. I use the term “cookie” loosely because it does not taste like your traditional sugary treat, but this is a great recipe for those who avoid added sugar (like myself). The 2-ingredient cookie also makes for a great breakfast alternative. Swap out a processed protein/breakfast bar for this and your day is off to a great start!

The fun thing about this 2-ingredient cookie recipe is that you can add in additional “flavoring” to make it to your liking. I’ve used the pumpkin pie seasoning from Trader Joe’s to give it a pumpkin-spiced flavor, but you could also add cinnamon, vanilla extract, or cocoa. The possibilities are endless! I’ve listed below some suggestions of simple ‘add ins’ you could try. Just make sure you don’t add too much that the dough isn’t moist enough for baking.

  • Vanilla extract
  • Chocolate chips
  • Peanut butter
  • Nutella
  • Dried fruits (cranberries or raisins)
  • Chopped nuts (walnuts, almond or pecans)
  • Coconut flakes
  • Cocoa nibs

Shopping List

  • 2 bananas (the more ripe the better)
  • 2 cups quick oats (make sure they are gluten-free)
  • Your favorite “add ins” (optional)

Instructions

  • Preheat oven to 350°.
  • Add the bananas and oats to a bowl and mash until creamed together (I use a fork).
  • Add any additional seasoning (like the pumpkin pie seasoning or cinnamon) to the mixture and stir.
  • Line a cookie sheet with parchment paper and drop the cookie mixture in small spoonfuls. Use the spoon to flatten the top so they bake flat.
  • Bake for 15 minutes and enjoy!
