Gluten & Dairy-Free Chicken Parmesan(Less)

I’m not quite sure I can call this recipe Chicken Parmesan since I don’t actually use any cheese (making it dairy-free). However, if you are making for a group and some people want to add cheese you can easily adjust the recipe to accommodate all. My gluten & dairy-free chicken parmesan(less) recipe was created while I was trying to find new recipes to use my new favorite tomato sauce. Rao’s Sensitive Marinara Sauce is great because it is made without garlic or onion, but still has a great flavor. I recently used it to make gluten-free turkey meatballs, another recipe I recommend. Plus, any recipe with fresh chopped basil is great!

I served my chicken parmesan(less) with a side of rice pasta, but you can make this meal a little healthier by serving with a baked vegetable like broccoli or zucchini.

If you are adding cheese, also get…

  • 2-3 slices of fresh mozzarella per chicken breast
  • 1/4 cup grated Parmesan cheese

Instructions

  • Preheat an oven to 450°.
  • Place chicken breasts in a resealable bag and pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch.
  • Sprinkle both sides of the chicken thoroughly with salt and pepper.
  • Whisk eggs in a shallow bowl and set aside.
  • Place 1 cup bread crumbs in a shallow bowl and set aside.
  • Dip the chicken breasts in the beaten eggs then dip into the bread crumbs, coating the chicken with crumbs on both sides.
  • Heat 2 tablespoons olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken until golden, about 2 minutes on each side (the chicken will finish cooking in the oven).
  • Place the chicken in a baking dish and top each breast with about 1/4 cup of tomato sauce and fresh chopped basil. If you are adding cheese to the chicken, top with a few slices of fresh or shredded mozzarella and sprinkle 1 to 2 tablespoons of Parmesan cheese. You may also want to add an extra layer of sauce.
  • Bake in the preheated oven for about 15 to 20 minutes, or when internal temperature equals 165°. If you added the cheese, it should be brown and bubbly when it is done cooking.
