Filet Mignon with French Green Beans

A good steak dinner can be expensive at a nice restaurant, so why not make it at home? You can purchase a better quality steak (we got grass fed filet mignon on sale at Earth Fare for $6 each) and they are incredibly easy to make! We prepared our filet mignon with french green beans as well as a side of baked sweet potato slices.

Shopping List

  • 7 oz grass fed filet mignon
  • 1 bag of French green beans
  • Camp Mix (or salt and pepper)

Instructions:

  • Preheat oven 400°.
  • Season both sides of the steaks with Camp Mix (or salt and pepper).
  • Preheat an oven safe skillet on the stovetop to medium heat. Spray with nonstick cooking spray (I use Trader Joe’s olive oil spray) and place the steaks in the skillet.
  • Cook the steaks for about 6 minutes on each side (depending on thickness).
  • Remove from stovetop, place the skillet in the oven, and bake the steaks for 3 minutes on each side.

For reference our steaks were about 1 1/2 inches thick and the above cooking times cooked them to medium well. The last time I cooked steaks they were a little thinner (1 inch) and I cooked them for 4-5 minutes on each side on the stovetop and only 2 minutes per side in the oven.

To cook the French green beans…

  • Drop the green beans into boiling water for 1 minute.
  • Remove quickly and plunge into cold water (or cover with ice to stop cooking immediately).
